Our biozentrale millet is a natural source of protein with its gold-yellow, small grains. It is peeled and can be used in many ways: as a base in a delicious porridge for breakfast or as a savoury add-on, e.g. as a garnish in soups, for roasts or ‘milletisottos’ (risotto with millet). Millet is also a perfect side dish, because it is loose and has a fine texture.

Cook the millet in plenty of water (approx. 1 cup of millet in 2 cups of water) approx. 10 minutes. Then let swell for approx. 10 minutes.
